These crackers are of the stacked-cookie ilk – meaning several cookie rings were iced together to form each cylinder. Other tips: Food coloring was first mixed into the dough to minimize the need for icing; then holes (to house the hidden candy) were cut in the disks pre-baking. The resulting cookie rings were baked minimally to avoid browning and altering of the dough color. Then, once cooled, the rings were glued together with thick royal icing of “glue” consistency. These crackers were some of Julia’s first 3-D cookies, made before she started filming YouTube videos, but you can see an iced and stenciled variation of this project in this later video.
