Doesn’t this cookie look like it’s covered with real embroidered needlepoint?! Well, that’s why Julia refers to this extreme extension of outlining and flooding as the needlepoint technique! The outlining here is the actual grid, which Julia piped with an icing of outlining (aka piping) consistency; the flooded areas are all of the tiny filled holes in the grid, which were piped with icing of beadwork consistency. Because making cookies of this type is great piping practice, Julia often teaches a needlepoint cookie in her beginner cookie decorating classes.
