Not the typical view you’d expect to see on Easter bunny cookies! But as you probably know by now, Julia always loves to inject some surprise into her cookies and dessert table displays. These cookies are plump lemon-poppyseed softies, which can be found in Julia’s first book Cookie Swap. Julia dipped them in royal icing and then, after the icing dried, attached fondant ears. To keep them upright in the wheat grass, she “glued” them with thick royal icing to popsicle sticks. Royal icing transfers or fruit roll cut-outs could also work for the ears, so don’t feel confined to fondant if you don’t have any handy. For the recipe and more details, check out Julia’s book in the “RELATED PRODUCTS” links. (BTW, you may recall from elsewhere in this gallery that Julia did something similar with cupcakes for Mary Engelbreit’s Home Companion in 2005!)
