Overview: Join Julia for her first, very special demo at the fabulous Canada’s Baking and Sweets Show! In it, she’ll show you how to transform everyday cookies into magical works of art with innovative, yet easy make-ahead royal icing transfers. She’ll start with the very basics by defining “royal icing transfers” and why and when they’re useful in cookie decorating. She’ll then proceed to demo* the easiest of royal icing transfers: flat piped and stenciled (and rubber-stamped) ones, as you see on the Halloween, Chinese lantern, and vintage-style bon voyage cookies in the photo gallery below. Next, Julia will advance to her signature one- and two-tone embossed transfers (next two photos) and finally to contoured, airbrushed, and assembled transfers as shown in the hibiscus, clematis, and water lily cookies (last three photos).

*Note: Julia’s demo will focus on the various transfer types and techniques, and less so on replicating entire cookie designs. That way, once you’ve got the critical techniques under your belt, you’ll be better able to adapt and apply them to cookies of any design.

Skill Level: Suitable for everyone, though some understanding of royal icing will be helpful.

Prerequisites: No cookie decorating or royal icing experience is necessary.

  • Definition and uses of royal icing transfers
  • Simple flat piped transfers (including pros and cons of various piping substrates, i.e., parchment paper, acetate, and silicone)
  • Airbrushing/stenciling and rubber-stamping on flat piped transfers
  • One- and two-tone embossed transfers
  • Stenciled transfers
  • Contoured transfers (including piped, embossed, and stenciled variations)
  • Assembled transfers (including one assembled flower; possibly two, as time permits)
